Food Lab

The FAI Food Lab manufactures, curates, and distributes products that help TIP patients through their treatment regimens. The Food Lab produces easy-to-take and digest gummies containing microdoses of 28 different allergens specifically designed to facilitate dosing and simplify TIP treatment.

Kid-Friendly Dosing

Maintaining consistent and accurate food dosing is essential to patient safety and success in TIP treatment, where most dosing occurs at home. By meticulously managing each stage of the production process—from ingredient selection to final packaging—we ensure that every gummy meets our rigorous standards.

Since 2019, our allergen gummies have made dosing easier and more precise, with 28 food protein options in kid-friendly flavors.

In this video, Operations Manager Brandon Dagio will guide you through our innovative facility and showcase how we create safe, effective, and delicious gummies.

The Anatomy of a Gummy

In 2024, we’ll custom produce over 2.5 million fun-shaped gummies, each containing precise milligram amounts of allergen to ensure safe, consistent, and effective treatment.

  • Each gummy has a distinctive shape determined by the milligram dosing.
  • Gummies contain hand-measured amounts of natural food proteins derived from plant-based ingredients.
  • Each flavor contains: Water, Granulated Sugar, Beef Gelatin, Citric Acid, Potassium Sorbate, Artificial Flavor, Artificial Color, and Cornstarch.

Third-Party Tested

Safety is our top priority, from research to the development of new products. Before any new product is released, prototypes are sent to third-party labs for protein content verification and shelf life testing. Independent testing ensures our products meet FDA standards for safety and effectiveness.

Our focus on safety continues throughout order fulfillment, inspection and patient delivery. Our 3-point quality assurance processes require multiple technicians to inspect each treatment dose. When the doses reach our challenge centers, they are reinspected by clinical staff to guarantee our rigorous standards have been met. This meticulous attention to detail helps ensure that each patient receives precisely what they need to achieve Food Freedom.

Our Gummy Production Process in 6 steps

Gummy Production - Step 1
1. A Food Lab Technician carefully pours a homogeneous mixture composed of a precise dose of an allergen, water, granulated sugar, beef gelatin, citric acid, potassium sorbate, artificial flavor, and artificial color into gummy molds.
Gummy Production - Step 2
2.  The red gummy mixture is spread into silicone molds, ensuring consistency and precision in each piece.
Gummy Production - Step 3
3. After being dusted with cornstartch, allergen gummies are set to dry. This is a crucial resting period for achieving the perfect texture and consistency.
Gummy Production 3-3
4.  A technician carefully checks a batch of freshly unmolded gummies, ensuring quality control before stocking.
Gummy Packaging - Step 5
5. The allergen gummies are carefully packaged to ensure safety and quality. Wearing gloves and protective clothing, the Food Lab Technician handles individual pouches and containers of gummies.
Gummy Production - Step 6

6.  Allergen gummies are carefully stocked in a temperature-controlled space to ensure optimal quality and efficacy, preserving their texture and allergen content for patient use.

Gummy FAQs

What are the gummy ingredients?

The gummy doses we provide contain the following ingredients: Water, Granulated Sugar, Beef Gelatin, Citric Acid, Potassium Sorbate, Artificial Flavor, Artificial Color, and Cornstarch.

Do you provide vegan, kosher, halal, or dye less gummy dosing?
Currently, we do not offer options that are vegan, kosher, halal, or free of dyes.

Please note that all our gummies are made with beef gelatin without any alternatives. If
you cannot consume beef gelatin for religious reasons, we kindly request that you seek
permission to consume this ingredient from a religious leader.

Our Food Laboratory and its scientists are in the process of developing new types of food proteins that are both colorless and vegan. We will keep you updated on these advancements.
How should you store gummies?

Gummies should be stored in a cool, dry room and away from direct sunlight. When traveling, keep your gummies in a light-tight container, as they are sensitive to light exposure.

The gummies do not require refrigeration.
Keep your gummies enclosed in their provided packaging until your child is ready to dose. Exposing the gummies to open air will negatively affect the gummies’ texture.

The gelatins are not candy and should be stored out of reach of children. Each gelatin contains proteins that can potentially harm your child if more than the prescribed dose is consumed.

Drinking room-temperature water immediately after chewing gelatin is recommended to ensure the entire dose is swallowed.

Oversite

The facility, food sources, and machinery we use are FDA regulated, as required by law. Additionally, each batch of gummies undergoes rigorous third-party testing to verify the protein content in every gummy.
